Background info: Yee Kwan parted ways with her carreer as a Charter Surveyor in 2009 to create Yee Kwan Ice Cream with an aim to fill the gap in the ice cream industry by providing innovative and exciting flavour combinations that are inspired by her travels around the world. She has now been amongst the Great Taste Award Winners for 5 years running, after her successful appearance on Dragon’s Den she is now mentored by Deborah Meaden and last week she starred on My Kitchen Rules UK with Pierre Koffman.

Yee Kwan Limited Edition Festive Ice Cream : Stollen Ice Cream
Details: The mixed dried fruits and marzipan that traditionally fill stollen are hand-toasted and then carefully mixed into a sweet aromatic marzipan ice cream.
Inspiration: Yee Kwan’s brother in law Sascha is from Germany and was inspired by the “official” Dresden Stollen produced by only 150 Dresden bakers. Traditionally baked at Christmas time the Stollen shape resembles the body shape of the wrapped Jesus child hence the white icing sugar on top. Yee used this inspiration for her festive limited edition ice cream.
Eat with: Apricot tart, Apple and cherry frangipane tart, Black forest cherry and chocolate pavlova
Drink with: Spätlese, Auslese or Beerenauslese Riesling, Dark Rum, Pineau de Charentes, Cognac, Marsala Dolce.

Inspiration: Yee Kwan grew up eating fig roll biscuits when she was a child as they were her late father’s favourite biscuits! Paired with deliciously creamy mascarpone ice cream this delectable flavour is a homage to her father who is one of her biggest inspirations.

Yee Kwan is 41 years old, born in Sheffield with Chinese heritage. Mother to three young children (Max 10, Dexter 5, Alexa 2). Yee Kwan Previously worked as a chartered quantity surveyor for 8 years but decided to follow her passion for food.

Sheffield natives and sisters-in-law, Yee Kwan and Natalie were the winners of the Northern regional round and are returning to the screen on the week of the 23rd of October. The forthcoming rounds will see them cooking Braised Rabbit and Pomme Purées with Pierre Koffman. Other episodes in the same week feature Rachel Khoo and Ken Hom.
