We are pleased to announce the launch of Cubé, a unique Japanese restaurant and bar in Mayfair, London.
The ground floor dining room offers customers both traditional Japanese dishes rarely found in London and a selection of unique Japanese dishes influenced by European ingredients. The lower-ground Kakurega bar (meaning hideaway) serves seven Japanese cocktails, rare examples of Sake, Japanese whisky and fine wines.
Traditional Japanese dishes include Hitsumabushi (Nagoya’s famous dish prepared differently from the similar unadon), Shigureni (flavourful braised beef dish) and Taco Rice (created in Okinawa Island following influence from American military). Dishes influenced by European ingredients include Udon with Black Olive & Truffle pesto (v), Mentai Rencon Cheese and Agedashi Tofu with Watercress and Truffle. Sushi and omakase menus are also available.
Both bar and restaurant are extremely simplistic and clean in design using bespoke wood fittings throughout to both reflect the Japanese love for the material and a reference to how 60% of Japan is covered by forest.
Kakurega Bar (Hideaway Bar):
In Japanese (かく ·れ ·家) a place of hiding or refuge.
The specially created list of seven Japanese cocktails garnished with home-dried Japanese fruits including:
- One-On-One : Tapatio Blanco, Yuzu-Shu,Lime, Agave Syrup, Egg White, Jerry Tomas Bitters
- Okinawa Old Fashioned : Mikkakoji, Anitica Formula, Kokuto Sugar, Grapefruit peel, Angostura Bitters
- Smoky Negroni : Ardbeg 10y, Campari, Antica Formula, Aragoshi Ume- shu, Orange peel
The bar also stocks rare and unusual examples of Sake (e.g. Dasai Beyond and Shirakabegura Kimoto Junmai), Whisky (e.g. 20 Premium Suntory Yamazaki 18yr and four varieties of Ichiro’s Malt) as well as an “Owners Cellar’ with low mark ups on extremely rare wines (Salon Champagne 1999, Vosne Romanee Les Hautes Maizieres DPR 1996, Chateau Palmer 1985, Opus One, Egon Muller Scharzhofberg Auslese 1999).
